Red Pepper and Sweet Potato Savoury Protein Pancakes

Red Pepper and Sweet Potato Savoury Protein Pancakes

Before we give you the recipe for Red Pepper and Sweet Potato Savoury Protein Pancakes, let us tell you a bit of the background:

These oat wraps – or savory pancakes, rather – were born out of a desire to make more ‘mom and toddler food.’ You know, food that you can make and eat with a toddler, in different forms of course. Using not only red peppers and/or sweet potato but also spinach, broccoli, green beans, cawliflower, and/or leeks! They’re really good!

Make one big bowl of batter and, out of that batter,  fry up two large pancakes (on a pan with tiny bit of coconut oil). Then season and stuff with cheese – either ricotta or feta, or a combo of cheese and chicken +/- more veggies,  The end product features a nice amount of protein, fiber, vitamins and minerals – and it’s incredible. You can play around with your veggies as well. These pancakes here, for instance, feature not only red pepper but also sweet potato.

We urge you strongly to try this recipe. Scrap that. We demand that you try it. It’s extremely healthy and your taste buds will love you for it!
