If you’re looking to make your own vegan protein bars (which you should – it’s really easy), this is the recipe you need to make.
These Chocolate & Vanilla Vegan Protein Bars require no baking and are quite frankly, DELICIOUS! The perfect post-workout snack or evening treat to curb those sweet cravings.
Here’s the recipe:
Ingredients:
1/4 cup vanilla pea protein powder
1/4 cup goji berries
1 tablespoons pumpkin seed butter
1/4 cup date syrup
3 tablespoons coconut flour
3/4 cup cartoned coconut milk
4 squares 90% vegan chocolate
Directions:
1. Using an immersion blender or a good old fork, mix all the above ingredients together (except for the chocolate). Once your mix looks ‘mouldable’, shape it into six little bars. If it’s too sticky or too wet or too crumbly, adapt the batter by adding either more protein powder, more coconut flour, or more milk.
2. Once your bars are shaped, melt your chocolate in a bain marie (a glass bowl on top of a pot of boiling water). Then, dip the bars in there or spoon the chocolate on top before transferring to the freezer for 30 minutes to allow for the chocolate to set. That’s it: done! You can add a bit of honey comb on top for the extra crunch but this is optional and could be subbed with some nuts if you fancied!
