Whey Protein Coconut Pancakes

Ingredients:

22g coconut flour
200ml oat milk
1 scoops vanilla whey
1 whole large egg
1/4 teaspoon honey
some baking soda
teaspoon orange rind
a splash of vanilla essence
some cinnamon

Directions:

1. Add first the whey to the flour and baking soda.

2. In a separate bowl, mix the egg, milk, honey, orange rind, vanilla and cinnamon. Once mixed well, add the egg et. al. to the flour/whey/soda [One COULD just ignore all this and throw it all together though].

3. Once the batter is nice and thick, cook them on a non-stick, a spoonful at a time. If you have maple syrup around: drown them.

  1. I’ve never tried oat milk! Do you like it? These look really delicious! Unfortunately I cannot eat coconut flour anymore…it just doesn’t sit right in my tummy. But I might try oat flour or almond flour.

  2. I love oatmilk, especially with black tea! Plus, it’s really easy to make. As for the pancakes, all sorts of flours work, just remember to add the orange rind, vanilla and cinnamon – killer combo 🙂

  3. Mmmm this looks great! I love coconut flour in pancakes, especially when mixed with another type of flour- makes them so fluffy!
