1 banana
1/2 cup cottage cheese
1/2 cup vanilla whey protein
1/4 cup coconut flour
1/4 cup buckwheat flakes (could sub with oats too or quinoa flakes)
1/4 cup almonds
1/4 cup Brazil nuts
1. Blend together ingredients with a tiny bit of water, enough to make the ingredients stick together to form a batter before shaping into six ‘ovals’ (anything close to an ice cream bar shape)
2. Then, melt a bar of 85% dark chocolate in a bain marie (a glass bowl on top of a pot of boiling water) and dunk each bar in there.
3. Stick a fork through the middle of each bar, move the bars over to a tray, and into the freezer for a good hour.
4. Take out of freezer and enjoy
