Welcome to another recipe from my Protein Pow Hiking Series – a series dedicated to celebrating protein food and the great outdoors. Today’s hike was organized pretty last minute. I was actually going to hit gym this afternoon but, around eleven, I realized the day was GLORIOUS and a hike was in order.


Ingredients:
1/2 cup liquid egg whites
1/4 cup vanilla whey protein powder
2 tablespoons coconut flour
2 tablespoons vegan protein powder
1/2 grated zucchini
Directions:
1. Mix all ingredients together using a spoon or fork and fry them up as six little pancakes on a nonstick pan. As soon as you flip them, place some chunks of dark chocolate on top and allow it to melt against the heat of the pancake. I used 20 grams of (90% dark) chocolate overall.
2. You can then massage the chocolate into the Thingies – hnnng and allow them to cool in the freezer for 10 minutes. I actually took mine out after five minutes so the chocolate was still semi-soft when I put them in my tupperware and left but whatever, it set later on.

The hike itself was beeeeutiful! The destination was the sea but we actually stopped halfway and turned around due to the fact that the sun disappeared and the day turned hella cold so the sea will have to wait until next week. All in all we covered 8.5 miles in about 3 hours so it wasn’t as crazy as we originally had planned; truth is we we should have started earlier but hey, it was amazing anyways and the Thingies (enjoyed next to an egg, apple and a banana) were superb!
