The Great Protein Cookie Search – Cookie 1

I’ve decided to kick off the Great Protein Cookie Search with this recipe. This is a search that will end when a Mrs. Protein Fields recipe is found. This will be a high protein, low carb, ideally oatless, sugarless, crunchy (but soft), and tap-dance-worthy-deliiiiiicious cookie. Feel free to try these getting-there protein cookie recipes. I do however, warn you that, while they will yield good cookies, they won’t be as good as the final Perfect Protein Cookie. OK so these cookies. Well, they looked good, smelled good, but they tasted just ‘good’ and they turned out OK. I give them a 6/10 because of the texture, it was too bready and beh (the blame lies squarely on whey’s ‘shoulders’).

1/2 cup vanilla whey
2 eggs
2 dates
1/4 cup quinoa flakes
1/2 tablespoon apple fiber
1/8 tablespoon ground almonds
12g cocoa nibs
Baking soda

Blend all ingredients together and bake at 150 celsius for 15 minutes.

Macros per Serving (out of 6):

4.4g fat
11g carbs (2.2g fiber)
13g protein

Lesson 1: quinoa flakes, ground almonds, and cocoa nibs work great. Lesson 2: the perfect protein cookie contains little or no whey.

  1. Ah that’s a great idea! chickpea flour. I’m gonna give chickpea flour a shot and also coconut flour, it shall be reached! tell me know how your search goes! there’s just so many protein cookie recipes out there that in my opinion fail to get the right booooom type of cookie

  2. Don’t you love it when you grab the whey, knowing full well what it’s going to do in the oven, but you reach for it anyway…same thing happened to me today. Had to throw away something that would have tasted out of this world. Texture like a brick. And there was the pea and brown rice protein staring at me in hysterics. Experimentation is fun though … :)))
