Egg in a (Protein) Hole

I’m a big fan of the egg in a hole aka egg in the basket. There’s something funny about the whole idea of cutting a hole in the center of a piece of bread and throwing an egg in there to cook. Then, there’s the unpretentiousness of the name ‘egg in a hole’ – totally folksy, no frills about it 🙂

Bueno, this morning I was going to make a protein bread loaf to use a slice for the egg in a hole but I was too hungry to wait for it.

Pancake “bread” Ingredients:

123g egg whites
14g pea protein
4.5g coconut flour
13g hulled hemp seeds


1. Mixed and fried it up on coconut oil.

2. Cut a hole in it by pressing down a bottle cap and threw it back onto the hot pan before adding the egg in the middle, flipping it and voila.

3. Topped the whole thing with coriander, paprika, salt, and peppah… ahhhh, love Eggs!

Macros per Serving (out of 1):

34g protein
6g carbos (2g sugars/3g fiber)
10g fat
