Christmas Mince Pie Blondies Recipe

I just HAD to come up with a ‘mince pie’ based recipe I absolutely love them. What’s better than indulging in your favourite treats at Christmas?! Maybe a Christmas treat that is HEALTHY for you! I have been experimenting for a few weeks and finally found a mixture that works! High in protein, No refined sugar and Gluten free.

Blondie Base Layer:
⭐️3 tbsps of egg whites (or 1 whole egg)
⭐️Drizzle of vanilla essence
⭐️30g of Whey Protein 360  (butterscotch ripple Flavour)
⭐️50g of coconut flour
⭐️150ml of unsweetened almond milk
⭐️1 small banana (mashed)
⭐️1tsp of baking powder
⭐️1tsp of cinnamon

Mince Pie Layer
⭐️90g of sultanas/raisins
⭐️20g of agave syrup/honey
⭐️50g of coconut flour
⭐️Lots of cinnamon
⭐️Squirt of lemon juice
⭐️10g of flaked almonds
⭐️100ml of unsweetened almond milk
⭐️3 tbsps of egg whites (or 1 whole egg)
Top with extra sultanas before placing in the oven!

Carbohydrates: 9g Per Serving       Proteins: 8g Per Serving      Fats:  5g Per Serving   Calories: 172 Per Serving

Method

Make each layer in a separate bowl by just mixing everything together to form runny but still thick mixtures. Line a baking tray with baking paper and spoon on the blondie layer first and smooth. Then add the mince pie layer on top.
Cook at 180 for 30-40 minutes until golden brown on the edges!
