An indulgent ice cream that’s actually healthy?! Yep, we’ve done it! Using our mouth-watering TPW White Chocolate Fudge Rapids Peanut Butter  – just try not to eat the whole tub with a spoon before making this; trust us, its easily done! Packed with protein and healthy fats, paired with nutritious potassium-rich bananas, all while tasting like a deliciously naughty dessert – don’t mind if we do!

Nutrition per serving – kcal: 303, Protein: 8g, Carbs: 50g, Fat: 10g

Time: 5 minutes to prepare (1-2 hours to freeze bananas)

Step 1: Slice the bananas into small chunks and freeze until solid, at least 1-2 hours. 

Step 2: Once frozen, transfer the bananas to a food processor or strong blender. This will be a bit noisy since the bananas are essentially ice cubes and can take a few minutes to soften. You might need to pause the mixer to scrape the mixture down from the sides with a spatula so it blends evenly smooth. 

Step 3: Within a couple of minutes, you should start to see a thick, smooth, ice cream-like mixture in the food processor or blender. 

Step 4: Now, add the peanut butter, vanilla extract, cinnamon, sea salt (or anything else you might fancy adding). Pulse the processor/blender in bursts of a few seconds to combine all the ingredients without over-mixing and loosening the mixture. 

Step 5: Once everything is combined, scoop the mixture into two dishes and top with a drizzle of extra peanut butter, chopped roasted peanuts, little fudge pieces and white chocolate shavings (if desired)

Step 6: Dig in and enjoy!

Tip #1: If you fancy a change, you can alternate this recipe using different flavoured nut butters, adding a handful of frozen strawberries to the mixture or adding cacao powder to the ice cream mixture if you’re a chocoholic. This recipe is very versatile and can be significantly different simply by adding different toppings. Nutritious and so delicious! 

Tip #2: If you don’t want to eat your ice cream immediately, you can put the mixture back in the freezer, however it will lose some of it’s indulgent silkiness and creamy texture when you re-freeze it. Not that you need an excuse to eat the whole thing in one go! If you must exercise some self control, running the mixture through the processor/blender once more before serving will help somewhat.
