Ingredients
For the cake:
1 cup liquid egg whites
1/2 cup vanilla Pea Protein
2 tablespoons coconut flour
1/2 tablespoons toffee flavdrops
1 shot decaf espresso
For the filling
1/8 cup ricotta cheese (could sub this with good old Mascarpone!)
1 tablespoon vanilla Pea Protein
1/8 cup cartooned coconut milk
1/2 tablespoon toffee flavdrops
Directions
1. Blend cakey ingredients together and pan fry.
2. After that, mix the filling ingredients with a spoon.
3. Finally, stack the whole thing up – pancake, filling, pancake, filling, pancake, filling – and sprinkled with cocoa powder.
