Protein Stollen Recipe

Stollen is a special German Christmas bread. It’s a rich, fruity yeast bread with ingredients like dried fruits, nuts, and spices. It’s shaped like a swaddled baby Jesus and often has marzipan inside. After baking, it’s dusted with powdered sugar to look like snow.

Stollen is a popular holiday treat in Germany, especially in Dresden where they have a big Stollen festival. People all over the world enjoy Stollen during the Christmas season because it’s delicious and festive.

Protein Stollen

Ingredients:

1/2 cup vanilla Whey Protein powder
1/2 cup brown rice flour
2 tablespoons coconut flour
1/8 cup Pea Protein powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup liquid egg whites
1/2 cup raisins or sultanas
1/4 cup chopped apricots
1 tablespoon orange zest
1 teaspoon cinnamon
1 teaspoon cardamon
1/8 cup ground almonds
1/2 tablespoon sweetener of choice

Directions:

1. Whisk all of the above ingredients together until you get a sticky sort of dough.

2. Place this dough on a non-stick pan and bake it at 160 C (320 F) for about 25 minutes or until, when poked with a knife, your knife comes out clean.

3. To top it, sprinkle some coconut MCT powder on top once its cooled. That’s right, coconut MCT powder – not icing sugar. It looks just like icing sugar, but tastes so much better!
