The size of your loaf is determined by the ingredients you use, and there’s no magic expansion during baking. To ensure a satisfyingly-sized loaf, make sure your mixture fills the baking pan to the top.
Protein breads, being typically ‘flourless’ and yeast-free, lack the fluffiness of regular bread. While some alternatives like sorghum flour or buckwheat flour can add volume, our recipe takes a simpler approach.
By blending a selection of ingredients and baking the mix, we avoid the complexities of traditional bread-making, such as rolling and kneading dough, waiting for it to rise, and more. The result is a protein-packed bread that’s both easy to make and higher in protein.

1/4 cup unflavoured whey protein powder
1/4 cup Pea Protein 80
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3/4 cup gluten-free rolled oats (or regular instant oats)
1/8 cup organic flaxseed
1 cup liquid egg whites
1. Blend everything together using a food processor, immersion blender, or regular blender. You’ll get a pretty liquid mix.
2. Pour this mix into a large silicone bread pan, (using silicone helps because you don’t need to grease it – everything just pops right out) and bake at 170 C (338 F) for about 30-35 minutes or until, when stabbed with a knife, your knife comes out clean.
3. Allow it to cool before slicing and slice it either vertically into ten little slices or horizontally.
4. Add your turkey filling and include your faves: lettuce, tomato, mayo, or even bacon if you fancy a BLT.
