This may LOOK like a regular sandwich but would you believe it if I told you that the ‘bread’ is made out of smoked mackerel, butter beans, pea protein and egg whites? It’s true. I layered it with mustard, mayo and reduced salt & sugar ketchup. I would have LOVED to throw in some avocado and sliced tomatoes but the former are not ripe yet and the latter have all been devoured (I have a weakness for tomatoes). Anyways, I know it does sounds odd but, really, trust me, if you like mackerel and have ‘a thing’ for fish sandwiches, you’ll love this!
Ingredients
72g smoked mackerel
28g butter beans
166g liquid egg whites
12g pea protein
Directions
1. Mix using of course a handheld blender.
2. Cook it like a pancake on the nonstick.
3. Flip it, cut it into squares, and layered it with the aforementioned toppings.
