Low-Carb Chocolate Protein Pudding

That’s right, cauliflower. I know. It sounds ‘kind of’ gross. Whenmy friend Nicola told me to try adding chocolate protein powder to cauliflower, I couldn’t help but put on a rectangular smile while thinking a combination of ‘interesting’ and ‘yuck’. I’m not one to eschew creative cooking (you might be able to tell from my recipes?). In fact, I really do love outside the box thinking, particularly in the context of integrating fruit and veg to cakes et al but… when I first heard Nicola raving about cauliflower and chocolate, I tell you, I couldn’t get my head around the idea. I mean, cauliflower is savory! Right?! Wrong.

Ingredients:

2 cups steamed cauliflower florets
4 tablespoons cocoa powder (optional but good for extra cocoaness)
2 tablespoons coconut flour
1 cup chocolate whey protein powder (or casein!)
1 tablespoon milk (or more, it depends on how thick you want your pudding)

1 tablespoon toffee flavdrops (optional but nice!)

Directions:

Blended together until well mushed.

You may still be thinking ‘no way am I going to be mixing cauliflower and chocolate, what an abomination!’ To that I just want to say that I thought so too and here I am, heartily recommending it! What’s it like? Well… it’s lovely! You really can’t taste the cauliflower, it just tastes super chocolatey and thickly puddingy. One of the reasons I love this is because it allows for one to create a ridiculously healthy chocolate pudding which, for chocaholics like myself, represents a castle in the sky. Another thing I love about this is that it’s a fantastic way to create low carb puddings and truffles while retaining moisture and volume. In fact, I am thinking that tomorrow I will freeze some steamed cauliflower to fluff with chocolate whey – I’ve always wondered about low-carb protein fluffs and cauliflower might just hold the answer, waaa! so many possibilities.

  1. I tasted this when it was still warm and it was disgusting haha. Make sure you cool it first! You want to make sure that most of the cauliflower flavour is masked, so I would recommend having at least that amount of cocoa, and I added some Splenda too. In the end it was delicious!

    • Hehehe it’s actually good! you just have to use a nice tasting chocolate whey and cocoa! make sure it’s sweet enough and BOOM! cauliflower masked and a nice texture is there 😀
