Welcome to a really cool recipe for high protein pastry, and a protein veggie pie. High protein pastry is possible, it can be done and it can be tasty! Follow the steps below to indulge in an incredible protein veggie pie.
Crust Ingredients:
60 grams chickpea flour
30 grams brown rice protein powder (or unflavoured Pea Protein 80)
1 whole egg
Directions:
1. The egg was mixed into the rest of the ingredients, kneaded in and made into a ball which was then wrapped in clingfilm.
2. Stick in the fridge for 30 minutes. Then it roll it and put it in a ramekin.
3. Let it bake in the oven while you’re making the filling.
Filling Ingredients:
40 grams chopped red onion
2 cloves of garlic
Soy sauce (gluten free or regular)
250 grams mushrooms
100 grams already cooked spinach
30 grams pea protein
20 grams nutritional yeast
Directions:
1. Fry red onion and garlic on a nonstick pan and add a bit of soy sauce once they begin to seriously sizzle.
2. Then, add 250 grams of mushrooms and 100 grams of already-cooked spinach. When this is done, mix in your pea protein and nutritional yeast into the mushroom/onion mix.
3. Add the above to the pastry you made earlier.
3. When all the veggie filling is it, top it with another piece of pastry and bake it for about 20 minutes or until your pie is cooked.
