Halloween Protein Cookies

Ingredients for cookie (makes 4 cookies)

1 small banana
80g of Natural Vegan Protein
80g of Soy Protein 
2 tbsp of coconut flour
3/4 cup of coconut milk

For the icing:

75g icing Sugar
50ml milk (of your choice)
Vanilla extract
Food colourings (green, orange and black are perfect)

Instructions:

1. Chop the banana into fine slices and add into a large bowl with all the other ingredients for the cookie

2. Mix well until it turns into a thick, soft, dough like paste

3. Place on a cooking tray in equal amounts, place in the oven and cook at 170 C (338 F) for about 25-35 minutes

4. For the icing, whisk together all of the icing sugar with half of the milk, before gradually adding in the remaining milk to leave you with a glossy mixture.

5. Then add in your vanilla extract followed by separating into 3 equal containers before you add any food colouring.

6. Decorate whatever spooky way you want: black icing, googly eyes, even chocolate spider legs!
