DIY Protein Candy Bars (Vegan, Gluten-Free)

These bars are  delicious! And a great example of how awesome dairy-free & vegan protein bars can be. They have a creamy centre and you get this awesome crunch from the nuts inside too. And a creamy chocolate filling!

Ingredients
1.5 heaping tbsp (27g) cashew butter (or almond or peanut butter)
1/8 cup (10-12g) pea protein
1/2 tbsp (5g) cocoa powder
Stevia drops to taste (or, if you don’t like stevia, use your sweetener of choice! Coconut sugar is awesome as are ground up dates)
1.5 tbsp (25ml) coffee
4 squares dark chocolate (Anything over 70% works)
tbsp (10g) chopped nuts

Directions

1. First, make your protein dough by mixing the pea protein, cocoa, sweetener and coffee in a bowl until you get a play-doughy dough. If your dough is too sticky or wet, add more of the pea or cocoa. If it’s too dry, add a tiny bit more of the milk.
2. Melt your dark chocolate and pour half of it into a chocolate mold or, if you don’t have one, into muffin cups.
3. Add the nuts, then your dough, and finally the rest of the melted dark chocolate.
4. Leave to set in the fridge for an hour or the freezer for 20 minutes.

Macros per bar, out of the two you get from the ingredients above: 285kcals, 11g protein, 7g carbs, 19g fat (mostly from the but butter)

Note: These bars are pretty chunky but the beauty is that you can chop them up into squares, like Toblerone chocolate bars to end up with a bite-sized punch of protein!
