Did you know that you can fill your muffins with a casein protein filling to up their protein content and, also, make them more delicious? Check out this recipe!
Ingredients for the muffins
1 cup liquid egg whites
1/2 cup quinoa flakes
1 banana
1/2 cup vanilla Vegan Protein
1/8 cup coconut flour
1/8 cup organic golden linseeds (aka flaxseeds)
1 teaspoon baking powder
Ingredients for the frosting
1 scoop casein protein powder
1/2 pot Greek yogurt
Splash of milk
Directions
1. Blend together and bake at 170 C (338 F) for around 35 minutes or until your knife comes out clean when you poke them.
2. Then, for the filling, simply combine your casein protein powder (vanilla is best) with green yogurt and a bit of milk until you get the perfect texture!
3. Cut your muffins in the middle, dig out a hole, add your casein frosting and then also add some frosting on top, with or without a bit of sprinkled cinnamon on top.
