Baileys Protein Truffles

Indulgent, creamy and rich; these truffles deliver all-encompassing chocolatey bliss! Their bittersweet intensity can satisfy a sweet tooth with just one, making these ideal if you’re trying to watch what you eat! These are incredibly easy to prepare and make a delicious homemade gift or after-dinner treat!

A generous glug of Baileys Irish Cream takes these truffles to the next level; however, if you’d prefer to make these alcohol-free or child-friendly, you can simply replace the Baileys with double cream. 

Serves: x12 Truffles 

Nutrition per Truffle:  kcal: 85, Protein: 4g, Carbs: 12g, Fat: 2.5g

Ingredients: 

  • 180 g Medjool dates
  • 40g Whey 360 Extreme, Tiramisu Italiano flavour
  • 20g unsweetened cocoa powder
  • 1 Tbsp (15 ml) coconut oil, melted
  • 2 Tbsp TPW Loaded Nuts, Hazelnut Biscuit Crunch Abyss flavour (regular Peanut Butter also works just fine)
  • 2–3 Tbsp (30–45 ml) Baileys/Irish Cream Liqueur

Method:

  1. Add the dates to food processor or high-speed blender and process until they break 
  2. down enough to start rolling around the food processor in a big ball.
  3. Add all remaining ingredients and continue processing until fully combined, scraping down the sides of your processor as needed. The dough should stick together easily when pressed without being overly sticky. If your dough is too sticky, sprinkle a little more protein powder over your dough and combine.
  4. Using an ice cream scoop or tablespoon, scoop out the dough and roll into 12 x1-inch balls. Coat the truffles with the extra cocoa powder or experiment with different coatings such as cacao nibs, chopped nuts, sprinkles, chocolate shavings – whatever takes your fancy!
  5. Refrigerate for 30-60 minutes until firm. 
  6. Dig in and enjoy! You can store these truffles in a sealed container either in the fridge or at room temperature for up to a week. 

Tips: 

  1. If your dates are a bit dry, cover the with some hot water for around 10 minutes and drain before processing.
  2. We used a Tiramisu whey protein powder powder for these, but feel free to use whichever protein powder you have on hand (plant-based or whey). Just make sure you like the taste and be mindful that the flavour will impact the Baileys flavour of the truffles.
  3. You can omit the melted coconut oil and use an extra tablespoon of nut butter instead, but the truffles will be slightly less fudgy.
  4. The amount of liquid you need may vary depending on what type of protein powder you use, so begin with 2 Tbsp (30 ml) of Baileys and only add more if the dough is still too crumbly.
