Yesterday I met up with Nick from A Word On Nutrition (AWON) and these are the muffins I made for him. They contain a generous amount of creativity, a lavish sprinkling of misguidance, and a pinch of protein madness. Why did I not just make Nick some regular protein muffins? Well, because I gave him the option of choosing which kind of muffins he would like best out of six options: 1) Banana, 2) Chocolate, 3) Vanilla and Cinnamon, 4) Crazy Surprise Flavor, 5) Extra Crazy Surprise Flavor, 6) Ultimately Crazy Surprise Flavor and the man chose number 6. What’s a girl to do?
1 small cooked sweet potato
1/2 cup egg whites
1/2 cup oats
1/8 cup saffron water
1/4 cup brown rice protein powder
1/2 cup cartoned coconut milk
1 tablespoon coconut flour
1 tablespoon toffee flavdrops
1 teaspoon vanilla essence
1/2 teaspoon BLUE food coloring
Blended together and baked for 40 minutes at 170 C (332 F)
Macros per Serving (out of 6):
82.8kcals
8.1g protein
9.2g carbs (3g sugars)
1.2g fat (0.7g sat)
2.5g fiber
If you look at the ingredients’ list above, you’ll notice that, food coloring aside, the recipe isn’t really that crazy. The food coloring did it though, it threw Nick off. There he was, staring at the muffin, taking bite after bite with his eyes narrowed, his hand rubbing his chin. “I’ll give you a clue, think chorizo,” I said, thinking that chorizo = paella = saffron but that didn’t really work (it just confused him further, a la “there’s chorizo in here!?” hehe).
Anyways, I had two myself (one to ensure they were good, the other to confirm they were great) before setting them lose with Nick and thought that, while certainly unusual, they were not bad at all – nice and moist, muffiny in texture, and featuring strong toffee undertones against a the BAM from the vanilla and the BOOOOOM from the saffron. It was interesting how the blue food coloring turned so Hulkian green (not unexpected though given that saffron yellow + blue = green).
