Chocolate Protein Cookie-Cake Sandwiches

Ingredients:

1/2 cup pumpkin puree
1 tablespoon chestnut flour
3/4 cup egg whites
3 tablespoons quinoa flakes
3/4 cup chocolate Vegan Protein Powder (or Whey Protein)
3 tablespoons cocoa powder
1 whole egg
1/2 tablespoon sweetener

Directions:

1.Blend all of the above together and separate into cookie shapes

2. bake for 20 minutes at 180 C (356 F).

2. When the cookie-cakes are baked, sandwich them together with 1/4 cup of Vanilla Vegan Protein mixed with 1/2 cup of coconut milk.

    • Re the chestnut flour, sure! Re the whey, also sure BUT throw in some cottage cheese into the mix too so it doesn’t get all dry on ya 😉
